Happy Weekend and Happy 2017!!! Sorry, i have been less active. I had few new changes in my schedule so i had less time for the blog but i am back and looking forward to New Year and more blog posts on my page.
One of the hardest things for me while transforming into vegan lifestyle was many questions and debates what we can have for breakfast. Many dishes are made with eggs so i had to find a way. After doing some research i found tofu can be an amazing substitute for eggs. Let me say this, i’m not huge fan of tofu but if u prepare it properly it can taste really really good. So today, i have a new recipe for breakfast and i hope you enjoy it!
Well, let’s get started with the recipe!
Ingredients:
- 1 pack of organic extra firm tofu
- 1/2 red onion, sliced any way u like
- 1/2 green pepper, thinly sliced
- 1 medium portobello mushroom, sliced
- 1 cup of any kind of kale, chopped into small pieces
- oil of your choice ( olive or truffle oil)
- to make tofu sauce u will need:
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp chilli powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
Directions:
- Remove the tofu from the package and drain out the water. Wrap the tofu around absorbent towel then press gently to squeeze out all the water, u can also put something heavy on top. Such as: heavy book, skillet or any other heavy objects in your kitchen. I used dutch cast iron. U can leave for about 10 minutes or until all water in absorbed into the towel.
- Chop up all the veggies.
- Take large skillet on medium heat. Add olive oil and sautee red onion and greed pepper you chopped up. Cook for 4-5 minutes.
- Add mushrooms and kale, Keep stirring. Cover and lower the heat a little bit and let it cook for another 1-2 minutes until kale is almost soft. U don’t want to over cook it.
- Open the lid and season with salt and pepper.
- Now combine all spices for the tofu sauce then add 1/2 cup of water. Set aside.
- . Now remove the cast iron and unwrap your tofu. Using your hand and fork crumble it into small pieces.
- Now move the veggies to one side ( use pic for reference) and on other side add the tofu. Cook for 2 minutes then pour the sauce over the tofu.
- Now combine veggies with tofu. Adjust the taste as you like.
- Cook for another 4-5 minutes and boom all done!
- You can serve it with piece of toast. I got these delicious olive rolls from the bakery.
