Clementine Pound Cake

Happy Weekend! Sorry, i haven’t been posting any posts lately.  Today, i woke up and decided i want to bake pound cake using ingredient i have at home. I used clementine zest, poppy seeds and for sweetness i added agave nectar. It’s perfect for afternoon tea and something to satisfy your sugar craving.


Well, let’s get started with the recipe!

 

Ingredients:

  • flax meal mix ( 3 tbsp of flax meal 6 tbsp of water)
  • 5 tbsp of soy milk, room temperature
  • 1 teaspoon of pure vanilla extract
  • 1 1/2 cups of all purpose or whole wheat flour
  • ¼ of agave nectar or brown sugar
  • 1 teaspoon baking powder
  • ¼ salt
  • 1/2 cup vegan butter, melted
  • 2 tbsp poppy seeds or chia seeds
  • 1 clementine zest
  • 1 tbsp of coconut oil to grease the pan

Directions:

  1. Preheat oven to 350°F. Grease your loaf pan with coconut oil and then line the bottom with parchment paper.
  2. In small bowl, whist together your flax meal, milk, vanilla extract.
  3. Using electric mixer combine flour, baking powder, salt, agave nectar or brown sugar. Now, mix it on low for about a minute.
  4.  Add melted butter and egg mixture you made earlier.
  5. Add poppy seeds  then zest clementine peel, about half of the clementine is enough.
  6. Mix everything on high speed for about a minute or two.
  7. Transfer the mixture into the pan.
  8. Add remaining half the zest on top of the cake
  9. Bake for about 45-55 minutes until golden brown.
  10. Using the toothpaste insert it in the center of the cake and make sure it comes out clean.
  11. Let it cool for 10 minutes then its time to serve.
