Lemon-blueberry Muffins

TGIF everyone! The week is finally over that means time to treat yourself to something delicious. Today i decided to make something yummi to satisfy your sweet tooth. Who doesn’t love MUFFINS?.  Perfect for afternoon tea. There are few things you will need to get: such as muffin pan or, like i did, purchase foil baking cups. No muffin pans needed. It’s easy and affordable.


Well, let’s get started with the recipe!

 

Ingredients:

  • 2 cups of all-purpose flour
  • 1 cup of soy milk
  • 1 tsp lemon juice and zest from half a lemon
  • 1 tsp baking powder
  • ¼  tsp baking soda
  • 1 tbsp vanilla extract
  • 2 tbsp of cinnamon
  • pinch of salt
  • 2 tbsp brown sugar or any other sugar of your choice
  • 2 tbsp agave nectar
  • 2 tbsp melted coconut oil
  • 2 tbsp chia seeds
  • 2 cups of washed blueberries

Directions:

  1. Preheat oven to 375°F. Take your baking pan and line it with muffin cups.
  2. In medium bowl combine dry ingredients: flour, baking soda and powder, salt, sugar, chia seeds and cinnamon. Set aside.

  3.  In small bowl combine wet ingredients: lemon juice, agave nectar, soy milk, lemon zest, vanilla extract, coconut oil. Whisk it and set aside.

  4. Add wet ingredients slowly to dry ingredients. Mix it well.
  5.  Now add blueberries.

  6. Gently spoon the mixture into muffin cups. Make sure you don’t over fill it.

  7. Bake for about 25-27 minutes until golden brown on top.
  8. Insert toothpick in the center and it should come out clean.
  9.  Remove from the oven and let it cool for 5 minutes before serving.

  10. You can drizzle some lemon zest on top of the muffins for added flavor.
