Chocolate Chip Cookies

Happy Monday ! What a rainy day we’re having here. All i want to do is cuddle  with my dog and enjoy cup of tea with something sweet. I made these super delicious chocolate chip cookies that are perfect for days like today.

Ingredients:

  • 2 1/4 cups gluten free all purpose baking flour ( i used Bob’s red mill)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup of vegan dark chocolate chips
  • 3/4 cup packed brown sugar
  • 3/4 cup granulated pure sugar
  • 1 cup or 2 sticks of vegan butter or margarine (melted)
  • 1 teaspoon vanilla extract
  • ground flax seeds eggs mixture
  • Serves: Approximately 2 dozen cookies ( depends what size you make them)

Directions:

  1.  To make flax seed mix: 2 tbsp of ground flax seed and 6tbsp of water. Mix the mixture and let it stand for 5 minutes. It should look like consistency of an egg.
  2. Preheat oven to 375°F.  Mix together butter, sugar, vanilla, flax seed eggs in a small bowl until nice and smooth.

  3.  In the large bowl combine the flour, salt and baking soda. Mix it all together.
  4. Now slowly add the wet ingredients with dry ingredients. Mix it very well.
  5. Add chocolate chip. Give it one more stir.

  6. Drop by small spoonfuls onto ungreased pans. Use baking sheet for the pan.

  7. Bake for 9-11 minutes until edges nicely browned.
  8. Remove from the oven and let it cook for 5 minutes.
